In a small mixing bowl, combine the balsamic vinegar, honey, olive oil, minced garlic, salt, and pepper. Whisk together until well blended and set aside to allow the flavors to mingle.
Gently season both sides of the chicken breasts with salt and pepper. In a large skillet, heat a drizzle of olive oil over medium-high heat until shimmering.
Once the skillet is adequately hot, carefully place the seasoned chicken breasts into the pan. Sear for about 5-7 minutes on each side, ensuring that they are golden brown and properly cooked through (the internal temperature should reach 165°F / 75°C).
As the chicken nears completion, pour the prepared balsamic mixture over the chicken in the skillet, letting it simmer for an additional 2-3 minutes. This will create a rich and flavorful glaze to enhance the dish.
In the final minute of cooking, gently add the sliced strawberries to the skillet, tossing them carefully to coat in the delicious balsamic glaze without breaking them apart.
Once the chicken is completely cooked and the strawberries are warmed through, remove the skillet from heat, taking care not to overcook the strawberries.
Arrange the chicken on a serving platter, drizzling any remaining balsamic glaze from the skillet over the top. Finish by sprinkling fresh basil and mint on top for an aromatic and vibrant garnish.
