Instructions
Begin by preheating your oven to 400°F (200°C).
Thoroughly wash the sweet potatoes under running water and, using a fork, pierce each potato multiple times.
Lightly coat the sweet potatoes with a drizzle of olive oil and sprinkle them with salt. Bake for 45-60 minutes.
While the sweet potatoes are baking, mix the shredded chicken with the barbecue sauce in a bowl.
Stir in the corn, black beans, smoked paprika, and season with salt and pepper to taste.
Once the sweet potatoes are baked, cut each in half lengthwise and fluff the flesh with a fork.
Spoon the BBQ chicken mixture into each halved sweet potato and top with shredded cheese.
Return the stuffed sweet potatoes to the oven for an additional 10-15 minutes until the cheese is melted.
Sprinkle the tops with chopped green onions before serving.
Notes
Arrange the stuffed sweet potatoes on a large serving platter, and garnish with extra green onions and barbecue sauce.
