In a large mixing bowl, combine the Greek yogurt, honey or maple syrup, and vanilla extract. Stir well using a whisk or spatula until the mixture is thoroughly smooth and creamy.
Take your popsicle molds and begin building your parfait pops. Start by adding a layer of the yogurt mixture at the bottom. Next, add a layer of mixed berries on top. Sprinkle a layer of granola over the berries. Repeat these layers until each mold is nearly full, leaving a small gap at the top to allow for expansion as they freeze.
Once the layers are completed, carefully insert popsicle sticks into the center of each mold. To ensure the mixture settles evenly, gently tap the filled molds on the counter.
Cover each mold securely with a lid or a piece of aluminum foil. Place the molds into the freezer and allow them to freeze for at least 4 to 6 hours, or until they are solidly frozen through.
When you're ready to enjoy your pops, remove the molds from the freezer. To help release the pops, run warm water over the outside of the molds for a few seconds. Then, gently pull on the popsicle sticks to remove them.
Serve your berry yogurt parfait pops immediately. For an extra touch, garnish with fresh mint leaves on top for a pop of color and freshness.
