Instructions
In a sturdy glass or cocktail shaker, place the fresh blackberries along with the sage leaves.
With a muddler or the back of a spoon, gently crush the blackberries and sage together until the blackberries release their juices and the sage releases its aromatic oils.
Incorporate the honey (or agave syrup) and freshly squeezed lemon juice into the mixture, muddling once more until all flavors are well combined.
Fill the glass or shaker to the brim with ice cubes to chill the mixture.
Pour sparkling water over the ice, filling the glass to your preferred level, leaving some space at the top.
Using a spoon, stir gently to ensure the muddled blackberry and sage mixture is well integrated with the sparkling water.
Taste your mocktail; if you prefer it sweeter, add a little more honey or agave syrup and stir again.
Strain the mixture into a serving glass pre-filled with ice cubes, allowing some of the blackberry pulp and sage to filter through for added texture and flavor.
Finish with a beautiful garnish of extra blackberries and a sprig of sage.
Notes
For a vegan alternative, use agave syrup instead of honey.
