In a blender, add the Greek yogurt, fresh blueberries, honey or maple syrup, lemon juice, vanilla extract, and a pinch of salt.
Blend these ingredients until you reach a smooth consistency. For an extra burst of blueberry flavor, blend thoroughly, but if you prefer some texture, blend lightly to keep a few small blueberry bits intact.
Before proceeding, taste the mixture. If you desire a sweeter popsicle, feel free to incorporate more honey or maple syrup to suit your palate.
Carefully pour the yogurt mixture into your popsicle molds, ensuring to leave a small gap at the top of each mold to accommodate expansion during freezing.
Place the popsicle sticks into the molds. To remove any trapped air bubbles, gently tap the molds on the counter.
Transfer the molds to the freezer and allow them to freeze for a minimum of 4 to 6 hours—or until they are completely solid.
To easily release the popsicles, run warm water over the outside of the molds for a few seconds. Then, gently pull the pops out of their molds.
For an extra touch, garnish your popsicles with additional fresh blueberries before serving. Enjoy these refreshing treats!
