Instructions
In a large mixing bowl, combine the rolled oats, unsweetened shredded coconut, and protein powder. Use a spoon or whisk to stir these dry ingredients until they are thoroughly blended.
In another bowl, add the almond butter (or peanut butter), honey (or maple syrup), vanilla extract, and a pinch of salt. Whisk these wet ingredients together until they reach a smooth, creamy consistency.
Gradually pour the liquid mixture into the bowl of dry ingredients. Stir well until all components are uniformly combined.
Carefully fold in the blueberries, taking care not to mash them as you mix, to maintain their integrity.
Once everything is well incorporated, cover the bowl and place it in the refrigerator for about 30 minutes. This chilling time will help the mixture firm up for easier handling.
After chilling, use your hands to scoop and shape the mixture into small balls, each about 1 inch in diameter.
