Instructions
Begin by preheating your oven to 375°F (190°C). Prepare a baking sheet by lightly greasing it with olive oil or lining it with parchment paper to prevent sticking.
In a large mixing bowl, combine the cooked quinoa, finely chopped broccoli florets, shredded cheddar cheese, and eggs. Use a spoon or spatula to mix the ingredients thoroughly until they are fully incorporated.
To the mixture, add the breadcrumbs, garlic powder, onion powder, and a generous pinch of salt and freshly ground pepper. Stir well to ensure all ingredients are evenly blended together, creating a cohesive mix.
With your hands or using a cookie scoop, shape the mixture into small patties or bites. Arrange them on the prepared baking sheet, ensuring you leave enough space between each bite for even baking.
Place the baking sheet in the preheated oven and bake for approximately 20-25 minutes, or until the bites turn golden brown and develop a crispy exterior.
Once baked, remove the bites from the oven and allow them to cool slightly on the baking sheet before serving.
