Transfer the apple slices to a large bowl and drizzle them with fresh lemon juice. Gently toss the slices to ensure they are evenly coated without breaking them.
Evenly sprinkle the cinnamon-sugar mixture over the apple slices, carefully tossing again to coat every slice thoroughly.
Arrange the coated apple slices in a single layer on the prepared baking sheets, ensuring no slices are overlapping.
Place the baking sheets in the preheated oven and bake for 2 to 3 hours. Flip the apple slices halfway through the baking time.
