In a large mixing bowl, thoroughly combine the rolled oats, finely chopped dried mango, and shredded coconut. If you choose to include chia seeds or flaxseeds for added texture and nutrition, mix them in at this stage.
In a separate medium-sized bowl, whisk together the honey or maple syrup, almond butter (or peanut butter), vanilla extract, and sea salt. Continue whisking until the mixture is smooth and appears well combined, ensuring there are no lumps.
Gently pour the wet mixture into the bowl of dry ingredients. Using a spatula or your hands, mix everything together until every component is evenly coated and there are no dry patches in the mixture.
To form the energy bites, use your hands to take portions of the mixture and roll them into small balls, approximately 1 inch in diameter. If you find the mixture too sticky to handle, you can lightly dampen your hands with a bit of water to ease the rolling process.
Arrange the formed energy bites on a baking sheet or plate lined with parchment paper. Transfer them to the refrigerator and let them chill for at least 30 minutes, allowing them to firm up properly before serving.
After the energy bites are set and firm, store them in an airtight container in the refrigerator. Enjoy them at your leisure within a week for optimal freshness.
