Preheat your air fryer to a low temperature of 160°F (70°C).
Thoroughly wash the apples and core them to remove the seeds. Cut the apples into thin slices, approximately 1/8 inch thick, keeping the skin on.
In a small bowl, whisk together the ground cinnamon, coconut sugar, and a pinch of sea salt until well-blended.
In a large mixing bowl, lightly coat the apple slices with cooking spray or brush them with a thin layer of oil. Sprinkle the cinnamon-sugar blend over the apple slices, tossing gently to ensure every slice is evenly coated.
Place the apple slices in a single layer in the air fryer basket, making sure they do not overlap.
Cook the apple slices in the air fryer for approximately 15-20 minutes, flipping halfway through. Keep an eye on them until they turn golden brown and crispy.
Once cooked, carefully remove the apple chips from the air fryer and let them cool for a few minutes.

Serve in a vibrant bowl or on a rustic wooden platter. Dust with additional cinnamon before serving.
