Ingredients

4 boneless, skinless chicken breasts

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 red bell pepper, diced

1 yellow onion, chopped

2 cloves garlic, minced

1 tablespoon ground cumin

1 tablespoon chili powder

1 teaspoon smoked paprika

Salt and freshly ground black pepper to taste

Juice of 1 lime

Fresh cilantro, chopped (for garnish)

Optional toppings: Sliced avocados, sour cream, and shredded cheese

Instructions

Prepare the Chicken: Place the chicken breasts at the bottom of the crockpot, ensuring they are evenly spread out. Season the chicken generously with salt, black pepper, ground cumin, chili powder, and smoked paprika for a flavorful base.

Add Vegetables: Carefully layer the rinsed black beans, drained corn, diced tomatoes with green chilies, chopped red bell pepper, and chopped yellow onion over the seasoned chicken. Sprinkle the minced garlic on top of the vegetables for an aromatic boost.

Mix Ingredients: Squeeze the juice of one lime evenly over the entire mixture in the crockpot. With a gentle touch, stir the ingredients slightly to mix them without disturbing the chicken too much, ensuring the flavors meld without losing the integrity of the chicken breasts.

Cook: Cover the crockpot with its lid and set it to cook on low heat for 6-8 hours or on high heat for 3-4 hours. The chicken should be fork-tender and cooked through, absorbing all the delicious seasonings and vegetable flavors.

Shred the Chicken: Once the cooking time is up, carefully remove the chicken breasts from the crockpot. Using two forks, shred the chicken into bite-sized pieces. Return the shredded chicken to the pot and stir well with the other ingredients to combine everything thoroughly.

Serve: Ladle generous portions of the fiesta chicken mixture into bowls, garnishing each serving with fresh chopped cilantro. Offer optional toppings such as sliced avocados, creamy sour cream, and shredded cheese for guests to customize their bowls to their liking.

              Prep Time: 15 mins | Total Time: 6-8 hours | Servings: 6-8

                - Presentation Tips: Serve in colorful bowls to enhance visual appeal, garnishing each with a sprinkle of extra cilantro. Arrange a delightful platter of optional toppings next to the bowls, allowing guests to personalize their fiesta chicken experience. Enjoy!
