In a spacious mixing bowl, combine the ground turkey with the finely chopped spinach, crumbled feta cheese, breadcrumbs, minced garlic, and chopped onion.
Crack the egg into the bowl, then add the dried oregano, salt, and a few grinds of pepper.
Mix the ingredients gently with your hands until everything is well incorporated, taking care to avoid over-mixing to ensure the burgers remain tender and juicy.
Divide the mixture into 4 equal portions, shaping each into a patty about ¾ inch thick for even cooking.
Preheat your grill or skillet over medium heat, adding a drizzle of olive oil to the surface to prevent sticking and promote even browning.
Place the turkey patties on the grill or skillet and cook for approximately 5–6 minutes on each side. Use a meat thermometer to check that the internal temperature has reached 165°F (75°C) for safe consumption.
While the patties are cooking, toast the whole wheat burger buns on the grill for around 1 minute, or until they achieve a lovely golden brown color.
To assemble your burgers, take the bottom half of each bun and place a perfectly cooked turkey patty on it. Layer on fresh lettuce, add a few slices of juicy tomatoes, and finish with a generous dollop of cool tzatziki sauce.
Top with the other half of the bun, pressing down gently to secure. Serve immediately for the best taste and texture.
