baby carrots, thoroughly cleaned and trimmed

extra virgin olive oil

dried thyme

finely grated Parmesan cheese

fresh parsley, finely chopped (for garnish)
Instructions
Preheat your oven to 425°F (220°C).
In a mixing bowl, combine the olive oil, minced garlic, sea salt, black pepper, and dried thyme. Mix well.
Add the cleaned baby carrots to the bowl and toss until they are coated in the marinade.
Line a baking sheet with parchment paper and spread the marinated carrots in a single layer.
Roast the carrots in the preheated oven for 20-25 minutes, tossing halfway through.
Once roasted, sprinkle the grated Parmesan cheese over the hot carrots and toss gently.
Transfer the roasted carrots to a serving dish and sprinkle with fresh chopped parsley.
Notes
Serve in a rustic wooden bowl or vibrant platter, with a lemon wedge for extra zest.
