Instructions
Start by preheating your oven to 425°F (220°C). This ensures it's hot enough to roast the radishes properly.
In a large mixing bowl, add the halved radishes and pour in the olive oil. Sprinkle in the minced garlic, dried thyme, sea salt, and black pepper. Toss everything gently but thoroughly, making sure each radish is well-coated with the mixture.
Line a baking sheet with parchment paper for easy cleanup, then spread the seasoned radishes out in a single layer, ensuring they’re not crowded which promotes even cooking.
Place the baking sheet in the preheated oven and roast the radishes for about 20-25 minutes. Halfway through the roasting time, stir the radishes gently to ensure they caramelize evenly. Look for them to become tender and take on a lovely golden hue.
After 20-25 minutes, take the baking sheet out and sprinkle the freshly grated Parmesan cheese generously over the radishes. Return the sheet to the oven and roast for an additional 5 minutes, or until the cheese is melted and lightly golden and bubbly.
Once done, remove the baking sheet from the oven and allow it to cool for a few minutes. Gently transfer the radishes to a serving dish and garnish with finely chopped fresh parsley for a pop of color and freshness. Serve warm and enjoy!
