Instructions
Begin by preheating your oven to 425°F (220°C). Line a large baking sheet with parchment paper.
In a spacious mixing bowl, combine the peeled and cubed sweet potatoes. Drizzle in the extra virgin olive oil, then add the minced garlic, dried oregano, smoked paprika, and season with sea salt and freshly ground black pepper. Toss everything together thoroughly.
Spread the sweet potatoes out in a single layer on the prepared baking sheet.
Place the baking sheet in the preheated oven and roast the sweet potatoes for approximately 25-30 minutes, flipping halfway through for even browning.
After the roasting time, take the baking sheet out of the oven. Generously sprinkle the grated Parmesan cheese over the hot sweet potatoes and return them to the oven for an additional 5-7 minutes until the cheese has melted.
Once the cheese is melted, take the baking sheet out again and garnish with freshly chopped parsley. Serve immediately.
Notes
Serve the sweet potatoes in a shallow dish, and consider adding a slice of lemon on the side for extra brightness.
