Instructions
Prepare the Baking Sheet: Line a baking sheet with parchment paper.
Melt the White Chocolate: Melt the chopped white chocolate in a heatproof bowl using a double boiler or microwave.
Add Peppermint Flavor: Stir in the peppermint extract once the chocolate is melted.
Incorporate Crushed Candies: Fold in half of the crushed peppermint candies into the white chocolate mixture.
Spread the Mixture: Pour the white chocolate mixture onto the prepared baking sheet and spread evenly to about 1/4 inch thickness.
Sprinkle Toppings: Sprinkle the reserved crushed peppermint candies on top and drizzle melted dark chocolate if using.
Chill to Set: Refrigerate for 1-2 hours until the bark is set and hardened.
Break into Pieces: Peel the bark from the parchment paper and break it into rustic pieces.
Garnish: Lightly sprinkle a pinch of sea salt over the broken bark pieces before serving.
