Prepare the Marinade: In a medium-sized mixing bowl, use a whisk to combine the honey, freshly squeezed lime juice, olive oil, minced garlic, ground ginger, salt, and black pepper. Whisk until the mixture is smooth and uniform, creating a flavorful marinade.
Marinate the Chicken: Add the chicken cubes to the bowl of marinade, ensuring each piece is thoroughly coated. Cover the bowl with plastic wrap or a lid and refrigerate for a minimum of 30 minutes, or for optimal flavor, allow it to marinate for up to 2 hours.
Soak Skewers: While the chicken is marinating, soak bamboo skewers in a bowl of water for about 30 minutes. This will help prevent the skewers from burning when you grill them.
Preheat the Grill: Once the marinating period is over, preheat your grill or grill pan over medium-high heat.
Assemble the Skewers: After marinating, take the chicken out of the fridge. Begin threading the marinated chicken, alternating with the red bell pepper, green bell pepper, and red onion onto the soaked skewers. Aim for a colorful and balanced arrangement.
Grill the Skewers: Carefully place the skewers on the preheated grill. Cook for approximately 10-12 minutes, turning them occasionally, until the chicken is fully cooked and golden with lovely grill marks. The internal temperature should reach 165°F (75°C).

Notes
Arrange the skewers on a large serving platter, and consider providing lime wedges on the side for an extra zing.
