Begin by preheating your oven to 400°F (200°C). While the oven is heating, lightly grease a baking dish with cooking spray or a drizzle of olive oil to prevent sticking.
In a medium mixing bowl, combine the honey, Dijon mustard, olive oil, minced garlic, soy sauce, salt, and cracked black pepper. Whisk these ingredients together until you achieve a smooth and well-integrated glaze.
Arrange the salmon fillets in the greased baking dish, ensuring they are placed skin-side down for optimal cooking. Generously spoon the honey mustard glaze over each fillet, making sure to cover them well. Set aside a small amount of glaze for basting later.
