Begin by preheating your oven to 350°F (175°C). To facilitate cleanup later, line a large baking sheet with parchment paper.
In a spacious mixing bowl, combine the rolled oats, chopped pecans, ground cinnamon, and fine sea salt. Stir the mixture until all dry ingredients are well incorporated.
In a separate smaller bowl, whisk together the pure maple syrup and melted coconut oil until they form a smooth, cohesive mixture.
Gradually pour the liquid mixture over the dry oat and nut blend. Using a spatula or wooden spoon, stir until every oat and pecan is thoroughly coated in the syrupy goodness.
Carefully spread the granola mixture evenly across the prepared baking sheet. Using the back of the spatula, gently press down to form clusters, which will give your granola that delightful texture.
Place the baking sheet in your preheated oven and bake for 20 to 25 minutes. Be sure to stir the granola halfway through the baking time to ensure even browning. Keep a watchful eye during the last few minutes to prevent burning—golden is the goal!
Once the granola is beautifully golden brown, remove it from the oven and allow it to cool completely on the baking sheet. The granola will become even crunchier as it cools.
After cooling, fold in the dried cranberries and sunflower seeds, if you're using them, for extra flavor and texture.
Store your delicious granola in an airtight container at room temperature, where it will stay fresh for up to two weeks.
