Preheat your oven to 400°F (200°C) to prepare for baking.
In a shallow dish, combine the Italian-style breadcrumbs and grated Parmesan cheese. Mix them thoroughly to ensure a uniform blend.
Generously season both sides of each chicken breast with salt and freshly ground black pepper for enhanced flavor.
Take the basil pesto and spread a generous layer on one side of each chicken breast, ensuring full coverage for maximum flavor.
Carefully press the pesto-coated side of each chicken breast into the breadcrumb and Parmesan mixture, ensuring a thick, even coating on each piece.
Heat the olive oil in a large, oven-safe skillet over medium-high heat. Once the oil shimmers, carefully place the chicken breasts, pesto side down, into the skillet. Sear the chicken for about 2-3 minutes, or until golden brown.
With care, flip the chicken breasts over so that the coated side is facing up. Immediately transfer the skillet to the preheated oven. Bake the chicken for approximately 20-25 minutes, or until it is cooked through and registers an internal temperature of 165°F (75°C).
Upon removing the skillet from the oven, allow the chicken to rest for 5 minutes. This step is vital for juicy, flavorful chicken.
Notes
For an extra touch of elegance, drizzle additional basil pesto around the chicken on the plate.
