Instructions
Prepare the Strawberry Puree: Start by placing the sliced strawberries into a blender. Blend on high speed until you achieve a smooth consistency. For those who prefer some texture in their popsicles, blend only halfway to keep a few small strawberry chunks intact.
Make the Simple Syrup: In a small saucepan, combine the water and granulated sugar. Heat over medium heat, stirring continuously until the sugar has fully dissolved. Once dissolved, remove the saucepan from the heat and allow the syrup to cool to room temperature.
Combine Ingredients: In a large mixing bowl, mix together the strawberry puree, fresh lemon juice, and the cooled simple syrup. Stir thoroughly to ensure all the ingredients are well incorporated, allowing the flavors to blend beautifully.
Taste and Adjust: Before pouring into molds, taste your mixture. If you’d like it sweeter, feel free to add more sugar. If you prefer a more tart flavor, squeeze in additional lemon juice to balance the sweetness.
Fill Popsicle Molds: Carefully pour the mixed strawberry lemonade into popsicle molds, leaving a small amount of space at the top of each mold for expansion as they freeze. Insert popsicle sticks straight into the center of each mold.
Freeze: Place the filled molds into the freezer. Allow them to freeze for at least 4-6 hours, although for optimal results, freezing them overnight is recommended for solid popsicles.
Release the Popsicles: To remove the popsicles from their molds, run warm water over the outside of the molds for about 10-15 seconds. Gently tug on the popsicle sticks to pull them out.
Notes
For a sweeter taste, adjust sugar according to preference. Garnish with mint for a refreshing touch.
