Craft the Apple Filling: In a separate mixing bowl, combine the sliced apples with brown sugar, ground cinnamon, fresh lemon juice, and cornstarch. Toss to coat the apples evenly, then let the mixture sit for about 15 minutes to allow the flavors to meld and for the apples to soften slightly.
Preheat the Oven: Preheat your oven to 400°F (200°C). This will ensure it's hot enough to create a golden crust when the galette is ready to bake.
Roll Out the Dough: On a lightly floured work surface, roll out the chilled pie dough into a rough circle about 12 inches in diameter, ensuring it's approximately 1/8 inch thick. Carefully transfer the dough to a parchment-lined baking sheet, ensuring it maintains its round shape.
Assemble the Galette: Place the prepared apple filling in the center of the dough, leaving about a 2-inch border of dough all around. Gently fold the edges of the dough over the apples, overlapping and pleating as needed to give it an inviting rustic appearance.
Brush and Garnish: In a small bowl, beat the egg to create an egg wash. Using a pastry brush, lightly coat the exposed edges of the dough with the egg wash for a beautiful golden finish. Sprinkle coarse sugar generously over the crust to add texture and a delightful sweetness.
Bake to Perfection: Bake the galette in the preheated oven for 35-40 minutes, or until the apples are tender and the crust achieves a beautiful golden-brown color.
Cool and Serve: Once baked, remove the galette from the oven and allow it to cool for about 10 minutes on the baking sheet. Slice into wedges and serve warm or at room temperature. For an extra indulgence, consider adding a scoop of vanilla ice cream on the side!
