Begin by preparing your ingredients. In a high-speed blender, add the sliced strawberries, coconut milk, honey or maple syrup, vanilla extract, and a pinch of sea salt.
Blend the mixture on high until it reaches a smooth and creamy consistency. Taste it and feel free to adjust the sweetness according to your preference by adding more honey or maple syrup if needed.
If you prefer a bit of texture in your popsicles, take the blended mixture and gently fold in the shredded coconut using a spatula.
Carefully pour the strawberry-coconut mixture into your popsicle molds, filling each mold about ¾ full to allow room for expansion as they freeze.
Insert the popsicle sticks into the center of each mold, ensuring they stand upright. Place the molds into the freezer and allow them to freeze for at least 6 hours or until they are completely solid.
To remove the popsicles from the molds, run warm water over the outside of the molds for a few seconds, which will help loosen them. Gently pull on the sticks until the popsicles come free.
Serve the popsicles right away and savor the delightful combination of strawberry and coconut flavors!
