Instructions
Heat the olive oil in a large non-stick skillet over medium heat. Once hot, add the ground chicken to the skillet. Cook the chicken, breaking it apart with a wooden spoon, until it's nicely browned and fully cooked, about 5-7 minutes. Ensure there are no pink areas remaining.
After the chicken is cooked, add the diced red bell pepper, shredded carrots, and sliced green onions to the skillet. Stir everything together and continue stir-frying for an additional 3-4 minutes, or until the vegetables are tender but still crisp.
While the chicken and vegetables are cooking, prepare the sauce. In a small mixing bowl, combine the sweet chili sauce, soy sauce, rice vinegar, minced garlic, and ground ginger. Whisk it together until smooth.
Pour the prepared sauce over the chicken and vegetable mixture in the skillet. Stir well to ensure that all the ingredients are coated with the sauce. Allow the mixture to cook for an additional 2-3 minutes to let the flavors meld together.
Once ready, remove the skillet from the heat and let the chicken mixture cool slightly, about 5 minutes.
To assemble the lettuce wraps, take a crisp lettuce leaf and spoon a generous portion of the chicken mixture into its center. Be careful not to overfill, as it may spill out when you wrap it.
Finish off each wrap by garnishing with a sprinkle of fresh chopped cilantro and a few toasted sesame seeds for an extra layer of flavor and crunch.
