Instructions
Start by prepping the watermelon. Carefully cut the watermelon into 1-inch cubes and transfer them to a spacious mixing bowl.
Sprinkle the crumbled feta cheese generously over the watermelon cubes.
Using a sharp knife, thinly slice the cucumber into rounds and the red onion into delicate rings. Add both to the mixing bowl.
Roughly tear or chop the fresh mint leaves, and scatter them over the mixture.
In a separate small bowl, whisk together the extra virgin olive oil and balsamic glaze until they form a harmonious blend.
Drizzle the olive oil and balsamic mixture evenly over the salad ingredients.
With great care, gently toss the salad using a spatula or large spoon, mixing everything together while minimizing the breakage of the feta cheese.
Finally, season the salad with fresh salt and cracked black pepper to your liking.
Notes
Serve in a large glass bowl and garnish with additional mint leaves and balsamic glaze.
