Instructions
In a medium-sized mixing bowl, combine the rolled oats, almond milk, and the mashed banana. Stir the mixture until it is well combined and the banana is evenly distributed.
Incorporate the Greek yogurt, chia seeds, fresh blueberries, lemon juice, and lemon zest into the bowl. If you prefer a sweeter taste, add the maple syrup or honey. Mix thoroughly until all ingredients are evenly blended.
Sprinkle in a pinch of salt to elevate the flavor profile, and stir once more to combine all the elements well.
Carefully spoon the mixture into two or three jars or containers with lids. Ensure they are sealed tightly and then place them in the refrigerator.
Allow the oats to soak overnight, or for a minimum of 6 hours, so they can absorb the liquid and meld the flavors.
When morning comes, give the oats a good stir, and if it appears too thick, feel free to add a splash of almond milk to reach your desired consistency.
Before serving, embellish the top of each jar with additional fresh blueberries, a sprinkle of lemon zest, or a dollop of yogurt to enhance the presentation.
