Instructions
Preheat your oven to 400°F (200°C), ensuring it's fully heated before baking the potatoes.
In a large mixing bowl, combine the halved baby potatoes, minced garlic, olive oil, lemon juice, lemon zest, dried oregano, sea salt, and black pepper. Toss the ingredients together until all the potatoes are evenly coated.
Carefully transfer the seasoned potatoes to a large baking sheet, spreading them out in a single layer.
Roast the potatoes in the preheated oven for 30-35 minutes, stirring halfway through.
Once cooked to perfection, remove the baking sheet from the oven and let the potatoes cool for about 5 minutes.
Just before serving, garnish the potatoes with freshly chopped parsley.
