Instructions
In a large mixing bowl, combine the rolled oats and almond milk. Add in the lemon zest and freshly squeezed lemon juice, followed by the maple syrup and vanilla extract. Stir the mixture thoroughly until all ingredients are fully blended together.
If you are using chia seeds, add them to the bowl along with a pinch of salt. Mix everything again to ensure the chia seeds are evenly distributed throughout the oat mixture.
Carefully fold in the fresh blueberries, saving a handful for topping once ready to serve.
Portion the mixture evenly into individual jars or airtight containers. Secure the lids and place them in the refrigerator overnight, or for at least 6 hours, allowing the oats to soak up the liquids and infuse with flavor.
When you’re ready to enjoy your oats the next morning, take them out of the fridge and give them a hearty stir. If you find the consistency is too thick for your liking, simply add a splash more of your chosen milk until you reach your desired creaminess.
Garnish your oats with the reserved blueberries and an additional sprinkle of fresh lemon zest for an invigorating touch. If you prefer a sweeter finish, feel free to drizzle a little extra maple syrup on top.
